This recipe incorporates some of Dr Perricones favorite spices. Serves 4-6.
2 tbsp. canola oil
1 medium yellow onion, diced
3 tbsp. ginger, peeled and minced
2 cloves garlic, minced
2 lbs. boneless, skinless chicken breast
1/2 red pepper, thinly sliced
3 cups coconut milk
2 cups organic chicken broth
1 cup cooked chick peas
2 bay leaves
2 tbsp. turmeric*
2 tbsp. curry powder
1/2 tsp. cinnamon
2 tbsp. lime juice
hot chili sauce to taste
1/2 cup cilantro, chopped
- Lightly sauté onions, ginger, and garlic in oil in a large pot for 4 minutes.
- Cut chicken into 2-inch chunks. Add peppers and chicken to pot. Cook for 2 minutes.
- Add coconut milk, broth, chick peas, bay leaves, turmeric, curry powder, cinnamon, lime juice and chili sauce. Simmer for 30 minutes.
- Stir in 1/2 cup cilantro.
